N2 - This article proposes a machine for the process of pasteurization of Tarwi vegetable milk. The importance of this process lies in achieving a temperature profile that eliminates the greatest amount of pathogens present in milk without drastically reducing its protein concentration. However, this process has not been used in the production of milk based on Tarwi grain. Therefore, the mechanical design calculations were carried out, as well as the construction of the plant to have a milk processing capacity from 10 kilograms of untapped Tarwi. Also, the appropriate controller was selected and tuned to maintain a constant temperature of 75 degrees Celsius for 15 minutes. The tests were carried out with Tarwi milk from a cooking and filtering process at a temperature close to 50 degrees Celsius.
