Resumen
In Peru, most manufacturing companies are classified as micro and small enterprises (MSEs), as is the case in the food sector, where more than 90% of the total industry is microenterprises. However, MSEs face limitations that make it difficult to achieve competitive levels of efficiency, affecting their sustainability. Therefore, the objective of this research is to develop an improvement model to increase the efficiency in the use of raw materials in the production processes of food MSEs, adapted to low-income contexts. The implementation combines the use of Lean tools, mainly Poka-Yoke and TPM, along with Industry 4.0, considering the use of smart sensors. With the implementation of these tools, it is projected to reduce waste to 3.84%, recover 5.57% of raw materials and improve efficiency to 88%.
