N2 - This article analyzes the behavior of the agro-industrial sector in northern Peru, beginning with an analysis of the sector and its behavior in recent years. It also analyzes the production process and the economic impact of the factors evaluated in this research. It is carried out in a specific case where a problem is detected with the high loss rate in the production process of asparagus, specifically in the sub-process of cutting and packing. For this purpose, an exhaustive analysis of the reasons and causes that would generate this problem is carried out. It also considers the research of successful cases and similar situations where lean manufacturing tools are proposed to improve the production processes of an agro-exporting company. This research focuses on analyzing Lean Manufacturing tools to reduce the main problems presented within the company across a new production model that allows us to reduce waste and increase the company's profit and productivity. The model uses tools such as Jidoka, 5S, and work standardization, through pilot plans and simulations within agro-industrial SMEs. In addition, pilot plans were carried out for each proposed tool, obtaining results; a reduction of waste, an increase of 3.85 % of exportable and increase of the company's profit.
