Resumen

The agri-food supply chain faces the challenge of increasing its flow of raw materials by 70% to satisfy demand by 2050. The supply chain of the coffee industry presents deficiencies in its activities and processes, and as it is the second most marketed in the world, it is of great importance to analyze the performance of your supply chain in the phases it goes through. This study seeks to analyze the processes directly affecting the operational performance of coffee farms. We integrate Lean Supply Chain Management with Industry 4.0 tools and improve the operating performance by 17%. Finally, significant improvements have been demonstrated in the reduction of waste and the optimization of the agri-food supply chain.
