N2 - The Peruvian poultry sector experienced rapid and significant growth in recent years due to the high consumption of chicken meat across the country. It is a key sector in the country's economy and, despite being one of the countries with the highest per-capita consumption in Latin America, it holds the last place in poultry processing plant development and investment in South America. Currently, poultry-producing companies are noting a considerable increase in live poultry sales but not processed poultry, since the processing channels have not been increased in step with the current breeding levels. Specialists estimate that the percentage of processed poultry in formal Peruvian processing plants would only reach a maximum of 25%-30%. In view of this situation, we realize the existence of shortcomings in terms of poultry processing in Peru and propose a lean manufacturing production management model using an enterprise transformation approach to increase productivity in poultry processing plants to help them become highly competitive and survive in the market. The model considers two basic tools of lean manufacturing: 5S and total productive maintenance (TPM).
